Head Dim Sum Chef – New Fortuna Restaurant (Wellington)

Employment type: Full-time, minimum 30 hours per week

New Fortuna Restaurant in Wellington is seeking a talented and experienced Head Dim Sum Chef to lead our dim sum section. We specialise in authentic Cantonese yum cha and Chinese cuisine, and we are looking for someone with a deep passion and strong skills in crafting traditional dim sum to manage and oversee our dim sum operations.

• Plan and lead daily production of a variety of traditional Cantonese dim sum.
• Develop new seasonal dim sum items to enrich our menu offerings.
• Supervise and train junior dim sum staff to maintain high food quality and consistency.
• Oversee kitchen operations related to dim sum including preparation, cooking, presentation, and hygiene standards.
• Manage ingredient inventory and assist in sourcing specialty items where necessary.
• Ensure all food safety, hygiene, and cleanliness standards are met in accordance with NZ regulations.

• Minimum 2 years of hands-on experience in Cantonese dim sum preparation in a commercial kitchen setting.
• Proven expertise in dim sum techniques such as steaming, pan-frying, deep-frying, and dough preparation.
• Ability to lead and coordinate a small kitchen team.
• Good time management and organisational skills.
• Knowledge of food safety standards in New Zealand.
