The Conservatory is an institution. The longest serving venue on the Wynyard Quarter on the waters edge. Our people are what makes us successful.
Open 7 days and 7 nights we cook seasonal, produce-led food. The team is tight, the standards are high, and we genuinely like each other, which matters when it's 7:30 on a Friday and the dockets are stacking up.
We're looking for a Chef de Partie to take ownership of a section and run it well. This isn't a fill-a-gap hire.
We want someone who's serious about food, calm under pressure, and ready to grow with us.
You'll report to our Head Chef and work alongside a crew that takes prep, plating and cleanliness as seriously as the dishes themselves.What the job actually looks like :
You'll run your own section of the kitchen: prepping it, plating it, and keeping it clean and stocked from setup through to the last table. You'll cook to our recipes and standards and always keep an eye on quality at every stage, from the morning's mise en place to the plate that leaves the pass. On a normal day that means:
Preparing and cooking food to order on your section, to The Conservatory's recipes, portion sizes and presentation standards.Monitoring the quality of dishes at every stage of preparation and presentation, and fixing anything that isn't right before it leaves the kitchen.
Organising your section's mise en place each shift, including ordering and receiving stock for your station, rotating it, and keeping waste down.
Helping plan and develop menu items with the Head Chef, including food costs and portioning input as the seasonal menu changes.
Talking through prep and service issues with the Head Chef, front-of-house and the rest of the kitchen so service runs smoothly.
Showing newer cooks and kitchen hands how things are done on your section, and helping train them as they find their feet.
Following and enforcing all food-safety and hygiene rules under our Food Control Plan, and keeping your station and equipment clean and compliant.
Storing, freezing and preserving food correctly so nothing's wasted and everything's safe.
What you'll need to bring
This role sits under the ANZSCO occupation Chef (351311), which is an ANZSCO skill level 2 role. To do the job well and to be considered, you'll need:
Either a relevant cookery / professional cookery qualification at NZQF Diploma level (ANZSCO skill level 2) or above, OR at least three years of relevant hands-on experience as a chef or cook that makes up for the formal qualification.Solid section experience in a busy à la carte or table-service kitchen, so you can run a station on your own through a full service without falling behind.
Confident core cooking skills across the board: knife work, sauces, proteins, timing and plating to a consistent standard.
A real working knowledge of food-safety and hygiene practice, and the discipline to keep your section to it every shift.Reliability and a level head. You turn up on time, communicate clearly, and stay calm when service gets very busy.
Happy to work a rotating roster that includes evenings, all weekends and public holidays.
Nice to have, but not deal-breakers: experience developing dishes or specials, and exposure to seasonal or produce-led menus. If you've got the attitude and the skills, we'll back you.

Guaranteed hours: A minimum of 30 hours guaranteed every week, throughout your employment. In practice you can expect close to 40 plus hours during busy periods.
Days & roster: Rotating roster across the week, including morning, afternoons, evenings, weekends and public holidays.
Pay: $27.00 per hour. This is a guaranteed hourly rate.
