Reporting to Executive Chef or Sous Chef, the CDP ensures food preparation and presentation meet Devon Hotel quality and safety standards, while assisting with junior staff training and menu pricing.
Key Duties and Responsibilities- Plan and execute the preparation, cooking, and presentation of dishes as per Devon Hotel quality and standards. Enforcing strict food safety protocols, HACCP principles, and allergen management.
- Assist in menu planning, estimating food and labour costs, and evaluating food supplies to minimize wastage.
- Monitor the consistency, quality, and portion control of all dishes leaving your section.
- Supervise, mentor, and train junior cooks, Commis Chefs, and kitchen hands.
- Conduct regular stocktaking, coordinate ordering & receiving, and ensure correct stock rotation.
- A trade or culinary qualification at NZQF/AQF Level 3 or above (e.g., Certificate III/IV in Commercial Cookery, or City & Guilds diploma).
- Minimum of 3 years of post-qualification commercial kitchen experience, with at least 2 years operating at a Chef de Partie or supervisor level.
Demonstrated ability to multitask under pressure, deep knowledge of various cooking techniques, and strict adherence to food hygiene guidelines.
