The Head Chef is responsible for overseeing all kitchen operations, maintaining high food quality standards, supervising staff, and ensuring full compliance with food safety and Health & Safety regulations. This is a genuine full-time role essential to the ongoing operation of the business.
Key Tasks & Responsibilities
Manage daily kitchen operations and service
Prepare, cook, and present authentic Japanese cuisine
Plan menus and contribute to menu development
Supervise, train, and roster kitchen staff
Monitor food quality, portion control, and presentation
Manage stock ordering, food cost control, and waste minimisation
Minimum 3 years of relevant commercial kitchen experience
Demonstrated experience in Japanese cuisine
Ability to work independently in a commercial kitchen environment
Strong leadership and organisational skills
Relevant culinary qualification preferred (but not mandatory)

The Chef Assistant supports senior kitchen staff with daily food preparation and service. This role requires hands-on experience in sashimi preparation and is essential to day-to-day kitchen operations.
Key Tasks & Responsibilities
Assist with preparation and cooking of Japanese dishes
Prepare sashimi, including fish portioning, slicing, and presentation
Handle and store raw seafood safely
Prepare ingredients, sauces, and basic menu items
Maintain kitchen cleanliness and organisation
Minimum 2 years of relevant commercial kitchen experience preferred
Demonstrated sashimi preparation experience
Knowledge of Japanese cuisine and raw seafood handling
Ability to work efficiently in a fast-paced kitchen
Reliable and able to work well as part of a team
