DUTIES AND RESPONSIBILITIES

  • Planning menus, estimating food and labour costs, and ordering food supplies
  • Monitoring quality of dishes at all stages of preparation and presentation
  • Discussing food preparation issues with the owner and kitchen colleagues.
  • Demonstrating techniques and advising on cooking procedures
  • Preparing and cooking food
  • Explaining and enforcing hygiene regulations
  • Knows proper function, operations, maintenance and cleaning of various kitchen appliance,
such as a blender, gas oven with hobs, stockpot cooker, dishwasher, fridges and freezers or
stand mixer
  • Checks food and ingredients for freshness to ensure the quality
  • Portions, arranges, and garnishes food to the required standard
  • Estimates expected food consumption and organises preparation
  • Assists in planning new dishes
  • Keeps a sanitised and orderly environment as per kitchen sanitation guidelines
  • Ensures all food and other items are stored properly
  • Has a positive attitude regarding the job and communicates with management and fellow
crews
  • Follows cooking methods, quality standards and kitchen rules, policies and procedures
  • May select and train junior cook
  • Follow set policies to maintain standards for food safety in all food preparation areas
  • Follow set policies to maintain standards for health & safety at work in all food preparation
areas
  • Inform the designated management if any hazards are identified that may affect work
conditions
  • Working with the owner to uphold morale in the kitchen
  • Working with the owner to ensure the relationship between kitchen and front-of-house staff is
of a high standard
  • Any other duties the Restaurant Manager / Head Chef may reasonably require
ESSENTIAL REQUIREMENTS

  • Two years New Zealand work experience OR minimum level 4 certificate/diploma gained in
New Zealand or Australia (Satisfying requirement for either experience or qualification NOT

both)
