The Role

As Sous Chef at Rutherford Hotel Nelson, you’ll play a key role in our culinary team, preparing high-quality dishes, supporting innovation, and ensuring consistency in every plate we serve. You’ll work alongside talented chefs in a professional and supportive kitchen environment.

Skills & Attributes

Culinary & Technical Skills
  • Strong foundation in classical and contemporary cooking techniques.
  • Proficiency in large-scale banquet production as well as à la carte cooking.
  • Ability for menu planning and recipe standardisation for both outlets.
  • Food safety, allergen management, and FCP/HACCP knowledge.
Leadership & Management
  • Supervising and motivating a diverse kitchen team across multiple outlets.
  • Coordinating staff between banquets and restaurant prep and service.
  • Training junior chefs, ability to delegate tasks and ensuring consistency.
  • Effective communication with Front of House team members and Kitchen team members.
Organisational & Operational Skills
  • Efficient mise en place management for high-volume events and daily service.
  • Stock control, ordering, and minimising waste.
  • Time management under pressure, balancing simultaneous service demands.
  • Cost control: portioning, yield management, and labour allocation.
Creativity & Adaptability
  • Ability to adapt menus to changing guest needs (dietary, cultural, seasonal).
  • Presentation skills suitable for both plated fine dining and banquet buffets.
  • Problem-solving when faced with last-minute changes or operational obstacles.
