- Key Responsibilities :
- Specialized Cookery: Plan and organize the preparation and cooking of authentic Indian and Nepalese dishes, specializing in Tandoor techniques, Himalayan spice blends, and regional curry profiles.
- Menu Development: Design and cost menus across R&B Hospitality sites, ensuring a balance of traditional Nepalese staples (e.g., Thakali Thali, Momo) and Indian classics.
- Quality Oversight: Monitor quality of dishes at all stages of preparation and presentation to maintain brand standards across multiple venues.
- Technical Training: Demonstrate and instruct kitchen staff in specialized procedures, such as proper dough fermentation for Naan and authentic tempering (Tadka) methods.
- Operations: Manage kitchen rosters and coordinate food supply orders for various locations.
- Compliance: Enforce strict hygiene and food safety regulations (FCP) and participate in kitchen staff recruitment.

- Qualification: Level 3 or 4 Cookery certification highly preferred.
- Key Responsibilities :
- Core Preparation: Prepare, season, and cook a wide range of Indian and Nepalese dishes, including hand-made Momos, Tandoori meats, and traditional lentil and vegetable preparations.
- Equipment Mastery: Regulate temperatures of Tandoor ovens, grills, and commercial stoves to ensure authentic texture and flavor.
- Inventory Control: Examine foodstuffs to ensure quality, manage stock rotation (FIFO), and store supplies in temperature-controlled facilities.
- Plating & Portioning: Portion food accurately and apply traditional garnishes and sauces.
- Hygiene Excellence: Maintain clean and sanitized workstations across various sites and prepare food to meet specific dietary or cultural requirements.
- Workplace Flexibility: Must be willing to work across all R&B Hospitality Limited sites in the Auckland region as per the roster.

- Staff Leadership: Select, train, and supervise front-of-house and kitchen staff, ensuring they understand the nuances of Indian and Nepalese hospitality.
- Compliance & Admin: Maintain stock levels and financial records; ensure all premises comply with health, safety, and liquor licensing regulations.
- Customer Relations: Confer with guests to assess satisfaction and handle feedback across different locations.

- Specialized Prep: Assist Chefs with the preparation of traditional ingredients, including vegetable chopping, meat marination, and prepping dough for Momos and Naan.
- Kitchen Scullery: Clean and sanitize all food preparation areas, sculleries, and heavy-duty cooking equipment (including Tandoors) to high hygiene standards.
- Dish Management: Wash, dry, and organize all kitchen utensils, pots, and service-ware using commercial equipment.
- Stock & Supplies: Transfer, weigh, and check incoming supplies. Ensure all Indian spices and bulk ingredients are stored according to FIFO (First-In, First-Out) standards.
- Basic Cookery: Assist in simple food assembly, heating, and plating of savouries or salads under the direction of the Senior Chef.
