Production Butcher (Lamb)

Are you a skilled butcher with a passion for precision and quality? Royalburn is looking for an experienced Lamb Butcher to join our high-production processing team.

About the Role:

As a key member of our butchery team, you’ll be responsible for:

• Processing whole lamb carcasses into individual cuts to specification
• Performing abattoir work as required
• Maintaining consistency in cut size and presentation based on established guidelines
• Cleaning down work areas and equipment at the end of each shift
• Working in a fast-paced, high-output environment where quality and hygiene are critical
• Working with and training apprentices

What We’re Looking For:

• Qualified butcher with formal training
• Minimum 2 years' experience in lamb butchery (ideally in a production or abattoir setting)
• Strong understanding of meat safety and hygiene standards
• Ability to work efficiently and maintain consistency under pressure
• Experience in an abattoir/slaughterhouse setting
• Team player with a good work ethic and attention to detail
• A meat inspector's licence or the ability to obtain one would be advantageous but not essential
