We are looking for an enthusiastic Executive Chef on a Permanent Full-Time basis to join our team at RNZAF-Ohakea.
RNZAF Ohakea is located within the Manawatu district, 26 km west of Palmerston North and 48km from Whanganui and 24 km from Marton and Feilding. With some of the best fly fishing, hunting, great walks, skiing and mountain bike trails in the country within easy reach of your doorstep it's an outdoor enthusiast's dream.This busy diverse Airforce Base is the Hub of the air wing in New Zealand and offers a unique chance and insight into the military world of Officer and senior/junior ranks training.

The purpose of this role is to work alongside the ESS Culinary Lead to deliver all aspects of the Culinary Operation for ESS Ohakea. The Executive Chef is employed to help manage the kitchen operations in a safe and efficient manner. To prepare, cook and serve good quality food for customers, residents or clients in conjunction with the contractual requirements of the unit.The Executive Chef must ensure that all tasks associated with food production are performed with due regard for all Health and Safety and Food Safety regulations.
In this position you will be responsible for:- Compass Group Culinary Best Practices
- Ensure market competitiveness by staying up-to-date with culinary market trends and competitor movements
- Plan and control menu-based catering
- Prepare and cost menus, whilst carrying out catering control procedures
- Lead and manage people by managing and coaching team
- Develop and implement staff roster
- Prepare, cook and present food
- Develop and update industry knowledge
- Plan the catering for an event of function
- Develop menus to meet special dietary and cultural needs
- Monitors overall talent within the ESS kitchens to ensure all employees have the skills and abilities to deliver upon any implemented operational initiatives
About you:
The successful applicant will have:- NZQA Level 4 Cookery Certificate or equivalent trade qualification
- NZQA Food Handling Certificate (Units 167 & 168)
- Minimum of 4 years proven work record with written references to show levels of expertise and experience
- A minimum of four years of relevant experience as a chef may be accepted as an alternative to the formal qualification requirements
- The ability to work under pressure, have a flexible approach and attitude, and be physically fit and reliable
