We are a growing Mexican food business based in Takanini, operating a busy taquería and preparing authentic Mexican-style dishes. We are looking for an experienced Cook to join our kitchen team. This role offers stable hours, a supportive work environment, and the opportunity to work with traditional ingredients and recipes.
About the Role
The Cook will prepare and cook a variety of Mexican-style dishes, including tacos, stews (guisos), salsas, and hot items. The role involves operating a griddle/plancha during service, managing mise en place, and ensuring all food is prepared to a consistent standard while maintaining food safety requirements.
- Key Responsibilities
Prepare and cook menu items according to our recipes and standards.
Operate the griddle/plancha during service, managing heat zones and multiple orders.
Prepare guisos and hot dishes such as birria/consomé, cochinita, tinga, and adobo-style stews.
Produce salsas from scratch, including roasting or rehydrating dried chiles and adjusting seasoning.
Accurately follow recipes to maintain flavour consistency.
Complete daily mise en place: portioning, marinating, chopping, labelling, and safe storage.
Handle specialty Mexican ingredients (e.g., guajillo, ancho, árbol, achiote, tomatillo, epazote).
Maintain strict food safety and hygiene standards, including cleaning routines, temperature checks, allergen awareness, and safe kitchen practices.
Follow FIFO stock rotation, minimise waste, and keep work areas clean and organised.
Work cooperatively in a small team, including setup and closing duties.- Skills & Experience Required
To be considered for this role, you must have:
At least 2 years’ experience as a Cook in a commercial kitchen.
Ability to work efficiently in a fast-paced kitchen environment.
Strong experience using a griddle/plancha during service.
Experience preparing dishes involving stews, marinades, roasting/blending chiles, or similar techniques.
Good understanding of food safety, hygiene procedures, and safe kitchen practices.
Ability to work rostered shifts including evenings and weekends.- Hours & Roster
